Today, MetroCaribbean features a Spicy Butter and Garlic Shrimp recipe from Dwaine Joseph a chef who is originally from the island of Antigua but now residing in the UK.
Ingredients:
1 doz Shrimp (your choice of size and with shell or without shell)
1 stick butter
3 tbsp paprika
3 tbsp cilantro finely chopped
1 hot pepper finely diced
3 cloves of garlic finely dice
1 tbsp ketchup
1 tbsp lime juice
Salt and pepper to taste
2 tbsp white wine
Method:
Season shrimp with salt, pepper and paprika and set aside.
In a medium skillet or frying pan melt butter over medium heat, add garlic and cook for 3 mins but remember to keep stirring to prevent the garlic from burning. Add the wine and cook for 3 more minutes, add ketchup and lime juice cook for 3 more minutes then add shrimp and hot peppers and cook until they turn pink. Turn off the heat and add cilantro then serve with garlic bread or your choice of side.
