Today’s feature is the Caribbean Coffee Mousse (Source:The Guardian)

Some people love their coffee black, and some love their coffee with cream but this unique, sweet and creamy recipe will make anyone wants to try it. Order this at your local coffee or journey to the Caribbean for a new rich taste of Coffee!

Recipe below:


Serves 4
3 tbsp water
1 glug of dark rum – approx 1 tbsp
1 tsp gelatin
250g condensed milk
4 tsp good-quality instant espresso powder
375ml whipping or double cream
How to: 

Pour  water and rum in a saucepan and sprinkle in the gelatin. Add the milk and the coffee and warm over a moderate heat until the coffee powder has dissolved. Remove the mix from the heat and cool thoroughly, stirring occasionally.

Whip the cream until stiff, then gently fold ⅔ of it into the coffee mix. Divide into 4 coffee cups or glasses and chill.

When ready to serve, top with the remaining cream, some dark chocolate shavings or a sprinkle of cocoa powder.
